Mexican night – one of our favourite nights of the week!

The beauty of cooking Mexican food is that you can pick and choose how much time and effort you want to put into your meal. Sometimes a quick, down and dirty taco night is what you need to get the job done during a busy week. The best Mexican nights that Danielle and I have are the ones where we can take our time and make everything from scratch. Don’t get me wrong, you can get the job done with a store-bought .salsa, and some are pretty good when you look in the fresh dips section at the grocery store. But what will set apart a good Mexican dinner from a great one is a fresh, homemade salsa or pico de Gallo!

 

In January, Danielle and I went on our honeymoon to Cabo San Lucas, Mexico! We had such a good time sightseeing and trying new things. A highlight was definitely all the different types of salsas. Who knew there were so many different types and flavours to explore! There was such a variety of salsas – some to compliment different Mexican dishes, and others just for dipping tortilla chips. They were all just so good!

For us at home, the go to and most trusted and versatile salsa to make is a pico de gallo. The key for me with this is fresh ingredients. This is what sets it apart from anything you will find in a grocery store. The extra bonus is that it also helps improve your knife skills as you need to finely chop your ingredients. The more you practice this, the easier it becomes! Another benefit to making it at home is you can control the spice level. If you like it hot, add more jalapenos. If you’re not one for spice at all, omit the jalapenos from the recipe altogether. Easy peasy!

Your Mexican nights will never be the same again, and your family and friends will say “muchos gracias”!
