Homemade Caesar dressing will help bring your salad game up a notch

Danielle and I were both fortunate enough to grow up on homemade caesar salad dressing. We love it! Sometimes we eat caesar two or three times a week. There is nothing like a good caesar salad, and nothing more disappointing than an average caesar. My mother’s caesar salad was one of my favourite meals growing up and we used to eat a plate full as an appetizer. For my mom, homemade caesar was more about necessity than anything else. She is allergic to anchovies so could not eat most fresh dressings available. As the story goes, my parents loved the caesar salad at one of the local restaurants that made it right at the table. They went often, watched and took notes at how they made it so my mom could perfect her own recipe. The result is this creamy, garlicky, dressing with a bit of a spicy kick! This is truly a stay at home caesar as you don’t want to be out in public the rest of the day after eating a plate!

Outside of the homemade dressing, Danielle and I also make sure that we use fresh Parmesan, real strips of bacon, and delicious seasoned croutons. I love a lemony punch to my caesar so I like to squeeze fresh lemon on top! It may take a bit more time, but once you start making your own caesar dressing, you will never go back to the store bought dressings!
